Estamos aquí de nuevo con el reto #BundtBakers. El reto de julio consistía en hacer un bundt utilizando frutas y frutos secos como ingredientes principales.
Me venían a la mente un montón de combinaciones, pero me apetecía hacer un bundt con plátano, y combinarlo con mis frutos secos preferidos los anacardos y los cacahuetes. Además, le añadí unos chips de chocolate, para darle el toque final. Le he llamado "Banana Monkey", por que a los monos ( al menos a los de los dibujos) les gustan los plátanos y los cacahuetes.

I had many combinations in my mind, but I would rather to make a bundt with banana, and mix it with my prefers nuts, cashews and peanuts. As well, I added a chocolate chips, to give final touch. I call it " Banana Monkey", because monkeys ( at least cartoons monkeys) like bananas and peanuts.
We find greats Bundt Cakes, you can see in the Pinterest group or in the Bundt Bakers group.

Ingredientes:
- 200 grs de mantequilla a temperatura ambiente
- 500 grs de azúcar
- 6 huevos
- 600 grs de harina con levadura incorporada
- 240 ml de leche
- 2 plátanos triturados
- 1 cda de vainilla en pasta
- 150 grs de anacardos y cacahuetes
- 100 grs de chips de chocolate
Preparación:
Precalentamos el horno a 180ºCCon la batidora eléctrica a velocidad media alta, mezclamos la mantequilla con el azúcar hasta que queda una pasta pálida.
Añadimos los huevo uno a uno, y batiendo siempre después de cada añadido.
Bajamos la velocidad de la batidora y le añadimos la harina tamizada en varios tiempos combinándola con la leche.
Por último, añadimos los plátanos triturados, los anacardos, los cacahuetes y la vainilla en pasta, mezclamos bien.
Engrasamos nuestro molde de bundt cake, y echamos los chips de chocolate de manera que decoren el bundt. Yo elegí el molde "Heritage", para que quedara mucho más bonito, e introduje los chips en las ranuras.
Horneamos durante 55 min o 1 hora más o menos, o hasta que al introducir un palillo este salga limpio.
Dejamos enfriar en el molde, y después lo desmoldamos en una rejilla para que acabe de enfriarse. Veremos que este bundt no necesita más decoración, los chips de chocolate ya nos sirven para que quede un bundt precioso.
Ingredients
- 200g butter
- 500g sugar
- 6 eggs
- 600g self-raising flour
- 240 ml whole milk
- 2 blended bananas
- 1 tablespoon vanilla paste
- 150g cashews and peanuts
- 100g choco chips
Directions:
Preheat the oven to 180º C / 350º F / gas 4.With the electric mixer in a hight velocity, cream the butter and the sugar until the batter become pale.
Add the eggs one at time, until combined, with the mixer turn.
Turn down the velocity of the mixer, and add the sifted flour, in several times combined with the milk.
Finally, fold the blended bananas, cashews, peanuts and the vanilla paste, combined well.
Grease our bundt pan, better with a non-stick spray. Add the choco chips in the edges of the pan. I used a " Heritage" pan because the shape could give it a beautiful touch.
Pour into the pan only 2/3. This batter is too much for only a pan, so we could use the rest to make muffins or whatever you want.
Oven for about 55- 60 minuts or until a skewer inserted into the center of the bundt comes out clean.
Leave the bundt in the pan to cool, and then turn out. We´ll see this bundt cake no needs more garnishes, only with the choco chips gives it a beautiful touch.
To make the photography stylist, I made my own banana stamp, I think it´s a cheap and original way to make decorations.
A pain in the neck heat wave is happening now, so I couldn t resist to make a home made raspberry ice cream, it fitted like a glove with the banana bundt cake.
