Pero lo realmente original de esta heladería, es el proceso de personalización que Carlos y Carmelo, los amables dueños de la heladería, llevan a cabo una vez que conseguimos decidirnos con los sabores y las mezclas. Sobre una plancha de granito a muy muy baja temperatura (-20º grados), se mezclan con la ayuda de dos espátulas, la base (el helado) y los ingredientes. El resultado es un helado totalmente a tu gusto, sano (los helados tienen entre un 40 y 50% de fruta) y natural, que no contiene más grasa que la propia de las materias primas, (máximo un 10%), y sin ningún tipo de aditivo o azúcares añadidos.
Además de los deliciosos helados, preparan riquísimos zumos de frutas, café, ensaladas, bollería o yogurt casero, todo para tomar allí o para llevar. En cuanto al local, es pequeño y moderno y todo lo que contiene (muebles, servilletas, cucharillas, etc.) es reciclado o reciclable, ¡si señor!

Mistura, handcrafted ice cream and surprising mixtures
If you like ice cream, you´ll love this place. In the middle of one of the coolest districts of Madrid, between Fuencarral and Hortaleza streets, there is a small handcrafted ice cream shop that, if it isn´t enough with its exquisite assortment, it also permits to personalize your ice cream “live” with your favorite ingredients. In Mistura they have between 15 and 20 different flavors and the same amount of extra ingredients like cookies, fresh fruit, dried fruits, chocolate or unusual jams (like orange with champagne or their newest flavor, melon), which will complicate a bit your decision.
Personally, I am not very a fan of pistachio ice cream, but with that of Mistura I have to do an exception! The coffee one, made out with fair trade coffee, is also delightful, and has a very intense flavor, mango is awesome. And I have to mention the typical Argentinian savor “dulce de leche” that tastes like tango… In addition, every month they launch a limited edition flavor, last month I was charmed with it: red wine with red fruits. What flavor will they surprise us next month with?
Besides the delicious ice creams, they prepare fruits juices, coffee, salads, pastries or natural yogurt, everything to take away or at the shop. The parlor is small and modern and everything inside (furniture, napkins, teaspoons, etc.) is recycled or recyclable, oh yes!
