Patata, huevo y trufa negra

Ingredientes para 4 pax / Ingredients for 4 people:


● 8 patatas grandes / 8 big potatoes
● 8 huevos / 8 eggs
● 40 gr de trufa negra / 1.41oz of black truffle
● C/s de aceite de oliva / olive oil as needed
● C/s de flor de sal / seasalt as needed
Elaboración / Elaboration:


Cortar la patata en cubos de 5 cm por 5 cm.Cut the potato into cubes of 1.96inch by 1.96inch.
Con la ayuda de la puntilla hacer un agujero en una de las caras.With the help of the lace make a hole in one side.
Lavar y reservar.Wash and set aside.
En un cazo poner aceite de oliva en abundancia y calentar a 100º C.In a pan put olive oil in abundance and heat to 212ºF.
Meter las patatas en el cazo y confitar a fuego lento durante unos 25 minutos.Put the  potatoes in saucepan and simmer confit for about 25 minutes.
Subir la temperatura del aceite a 160º C y terminar de hacer la patata.Top oil temperature to 320ºF and finish making potato.
Sacar la patata del aceite y reservar.Remove the potato from the oil pan and reserve.
Cascar los huevos y separar la yema de la clara.Break the eggs and separate the yolk from the white.
Colocar las yemas en el agujero de la patata y reservar.Place the yolks in the hole of the potato and set aside.
Remover la clara de huevo para que se rompa un poco y meterla en un biberón.Remove the egg so that it breaks a bit and put it in a bottle.
Calentar aceite de oliva en una sartén.Heat olive oil in a skillet.
Hacer líneas con la clara de huevo en el aceite y dejar que se tuesten como si fuera la puntilla.Make lines with the egg in the oil and let toasted like the lace.
Retirar y reservar.Remove and set aside.
Regar la yema del huevo con aceite bien caliente para dar un punto de calor.Water egg yolks with hot oil to give a hot spot.
Coger una bandeja y colocar 2 patatas por pax.Take a tray and place 2 potatoes per pax.
Poner unas tiras de clara de huevo frita por encima.Put strips of fried egg clear above.
Añadir flor de sal al gusto.Add sea salt to taste.
Rallar la trufa negra por encima de la patata.Grate black truffles over potatoes.
