Pan, aceite y chocolate

Ingredientes para 4 pax / Ingredients for 4 people:
●   200 gr de leche / 6.76fl oz of milk●   225 gr de nata / 7.93oz of cream●   250 gr de cobertura de chocolate / 8.81oz of chocolate frosting●   40 gr de azúcar / 1.41oz of sugar●   50 gr de mantequilla / 1.75oz of butter●   5 cl de coñac / 1.69fl oz of cognac●   1 barra de pan precocido / 1 loaf baked
●   100 ml de aceite de oliva / 3.38fl oz of olive oil●   3 gr de lecitina de soja / 0.10oz of soya lecithin●   C/s de flor de sal / salt as needed●   C/s de flores de lavanda / lavender flowers as needed

Elaboración / Elaboration:

Picar el chocolate y reservar en un bol.Chop the chocolate into a bowl and reserve.
Poner la leche, la nata y el azúcar en un cazo a hervir.Put the milk, cream and sugar in a saucepan to boil.
Verter la nata hirviendo encima del chocolate.Pour the boiling cream over the chocolate.
Mezclar y fundir el chocolate.Mix and melt the chocolate.
Añadir la mantequilla para dar brillo al ganache.Add the butter to brighten the ganache.
Añadir el coñac y mezclar bien.Add the brandy and mix well.
Enfriar y reservar en la nevera.Cool and keep in the fridge.
Precalentar el horno a 180ºC.Preheat oven to 356ºF.
Cortar láminas finas de pan en diagonal para que sean más largas.Thin slices of bread cut diagonally to be longer. 
Hornear 5 minutos y reservar.Bake 5 minutes and set aside.
En un cazo infusionar el aceite de oliva con unas flores de lavanda.In a saucepan infuse olive oil with some lavender flowers.
Añadir la lecitina al aceite y dejar que se deshaga.Add the oil and lecithin let unraveling.
Bajar el aceite a 60ºC y montar el aire con la ayuda de la batidora.Lower oil at 140ºF and mount the air with the help of the mixer.
Emplatado / Serve:
En un plato colocar una tostada de pan en el centro.On a plate, place a slice of bread in the middle. 
Hacer una quenelle de ganache y colocar encima.Make a quenelle of ganache and place on top.
Clavar otra tostada en la quenelle.Nail another toast in the quenelle.
Colocar flor de sal por encima del ganache.Place sea salt over the ganache.
Regar con el aire de aceite de oliva.Water with air olive oil.
Decorar con una flor de lavanda y un chorro de aceite de oliva por alrededor.Garnish with a lavender and a splash of olive oil around.
